A new recipe success!
TK loves his chicken nuggets!
Up to this point, I've been buying Applegate Farms, but they are just too expensive.
So I made my own.
My apologies for not having a REAL recipe, but I've started to take after my mom and add a little of this and a little of that. I think it makes cooking more adventurous, because with me at the stern, you never know how it's going to turn out!
I started with a combination of Brown Rice Flour and Corn Flour
I added some salt, pepper, garlic powder, and Italian Seasonings
I salted all my chicken pieces, dunked them in some Rice Milk
Covered them with my made-up breading, dipped them BACK INTO the Rice Milk
(It's all in the double dip!)
Back into the breading and finally into the nice hot veggie oil.
They turned out absolutely delicious! We all loved them. I paired them with some wheat, dairy, soy, peanut, etc free Corn Bread and corn.
Yumm-O!
It was a meal we could all enjoy!
Everything Free Corn Bread
1 1/4 Cups Corn Meal
1 1/4 Cups Oat Flour (I make my own with Quaker Oats and my blender)
1/2 Cup sugar
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 1/4 Cups Rice Milk
2 Tbsp. Oil
1 Tbsp. Apple Cider Vinegar
Mix all of the dry ingredients. Add Rice Milk, Oil, Vinegar, and mix well. Pour into greased 8x8 pan. (Be careful of the cooking sprays, because some of them contain soy. The one I used has soy lecithin, but even though my son is allergic to soy he seems to do ok with it. Soy lecithin does not contain any soy protein and most people with a soy allergy can tolerate it.) Bake 400 degrees for 25 minutes.
And seriously, it is goooood! Very crumbly though, so don't expect it to be finger food.
